Basque Burnt Cheesecake


  • 900g cream cheese
  • 1 cup sugar
  • 6 large eggs
  • 2 cups heavy cream
  • 1 tsp. salt
  • 1 tsp. Heilala Pure Vanilla Paste
  • 1/3 cup all-purpose flour
  • 10" Springform Pan

The How To

  1. Preheat oven to 200 deg C
  2. Butter Pan and line with parchment paper making sure the parchment comes at least 2" above the top of the pan
  3. Beat cream cheese and sugar in a bowl on medium-low speed until very smooth and no lumps remain
  4. Increase speed and add eggs one at a time
  5. Reduce speed and add heavy cream, salt and vanilla until nicely combined
  6. Sift flour evenly over cream cheese mixture and beat on low until incorporated
  7. Continue to beat until batter is very smooth
  8. Pour batter into pan and bake cheesecake until golden brown on top and still very jiggly in the center, roughly 60-65 minutes
  9. Let cool slightly before removing from mold
  10. Let cool completely before peeling away parchment from sides of cheesecake
  11. Serve at room temperature
