Maple Bacon Chilli Jam
Ingredients
250g Streaky Bacon
250g Chopped Red Onion
250ml Crown Very Dark Color Maple Syrup
50ml Kentucky Bourbon Whiskey
Pinch of Red Chilli Flakes
Splash of Full Moon Grand Reserve Balsamic Vinegar
The How To
Slice streaky bacon into small chucks (or how you like it) and fry up until crispy. Set aside for later.
In the same pan with residue bacon fat, fry onions until soft and caramelised.
Add Crown Very Dark Color Maple Syrup, Kentucky Bourbon Whiskey and Red Chilli Flakes (you can put as much as you like depending on how much heat you want from the Jam)
Stir and mix well letting it simmer over a low heat from about 15-20mins or until the jam has reduced to about 1/2 the volume.
Add Balsamic Vinegar for added complexity.
Serve as a spread or with cheeses.
Store in a clean jar in the fridge and warm up whenever required for use.
